“Fresh-Frozen” Fillet Portions
A fillet portion is approximately a pound (about half a fillet of sockeye/red salmon). While “fresh” and “frozen” are generally considered opposite terms, this is not so for the seafood industry. Unlike land animals, whose fibrous meat often requires a good pounding to achieve tenderness, fish meat is naturally delicate. As a result, a “firm” texture is actually desirable when evaluating a salmon fillet or steak. Because fish deteriorate rapidly, it is best to freeze it as soon as possible. This protects the integrity of the flesh, and results in a fresher flavor. Each of our fillets is flash frozen and vacuum sealed for freshness in individual packages.
